INSANITARY HANDLING OF MEAT AND MEAT PRODUCTS IN ABIA STATE.

ABSTRACT The safety of food supply is a major issue that has drawn the interest of people over the years. Most people have had poor knowledge and practice in food safety. This is the reason millions of people get sick from the food they eat and that is why it is important we keep the food supply relatively free from harmful substances, such as the chemicals used in growing and processing foods. The unsatisfactory level of meat hygiene and safety practices to a large extent is responsible for the high prevalence of food-borne diseases in Nigeria. This study is commissioned to address insanitary handling of meat and its by-products in Abia State. KEY WORDS: Meat hygiene, Micro-organisms, Meat spoilage organisms
